I have an iPad with 64GB and it's about half empty and I use it a lot for work. The biggest drain on space is movies. I upload what I need, find it and delete it. Pro I have an external HDD or NAS for archiving, from where I download the movies wirelessly.

Don't box :) For now, 16GB is enough for me and I have everything you describe except for books and only two games (namely GTASA and RR3, i.e. over 3GB), but it's not a problem if you don't have a mess and everything you don't need, I am anyway minilittle one, so really lonely appky that I need and if I don't count the ones from Apple like Remote... I have just over 10 of them :)
