I don't know about others - if it's the most requested feature, then I'm probably out of the loop - but I may have never even heard the sound on my iPhone (mini(I don't remember it at least a little bit), my sounds are off and notifications are on my watch.
I can say for myself that the most unexpected feature is the ability to turn on/off auto-brightness in the control center by holding down the brightness slider. I've had it buried somewhere deep in the settings for years, just to turn it "off-on" (when I manually go to brightness, it never activates "auto-brightness" and I have to do it manually).
